Join us for a hands-on class where you’ll learn how to make tamales – a classic Mexican dish made of soft corn dough filled with savory pork, wrapped in corn husks, and steamed until tender. Our Chef and guide, Lali Constantino will walk you through the basic steps, from assembling to steaming the tamales.
While the tamales cook, we’ll mix up a few fresh, flavorful sauces that pair perfectly with tamales or tacos using Little Ridge Farm produce. Once everything’s ready, we’ll enjoy lunch together featuring the tamales and sauces we’ve made. You’ll also take home the recipes so you can recreate it all in your own kitchen.

Meet Your Instructor:
Citlalli “Lali” Constantino is a passionate Mexican cook whose culinary journey spans restaurants, cafeterias, cruise ships, summer camps, and even the classroom as a college culinary arts instructor. She now brings her skills to the school nutrition program in an elementary school in Lewiston. Lali is equally at home in the kitchen and the garden—an avid gardener, birdwatcher, and nature lover with a deep love for farming and horticulture. Since moving to Maine, she’s fallen in love with the state—and a Mainer!—and embraces life here as a true naturalist at heart.
