Stuffed Poblano with tomato watermelon arugula salsa

Oh how I love peppers!! I am not a huge fan of hot, although I am getting less whimpy. Poblanos I can handle and LOVE them stuffed. This week we stuffed them with a shrimp, cream cheese and potato mash. The secret ingredient was the leftover sauce from Flux’s mussel dish : )
